Lentil and Chickpea Salad

Today I am going to be sharing with you a yummy  lentil and chickpea salad that is simple to make and leaves you full and satisfied after eating it, ready to defeat that afternoon slump.

Lentil & Chickpea Salad



  • 1/4 cup of Chickpeas
  • 1/4 cup of Lentils
  • 1/4 cup of Organic Hummus
  • Lettuce
  • Chopped Cucumber
  • Chopped Red Bell Pepper
  • Grated Carrot
  • Chopped Mushrooms
  • Chopped Kale
  • Chopped onion

Salad Dressing

  • Juice from 1/2 a lemon
  • Apple Cider Vinegar
  • Extra Virgin Olive Oil
  • Vegetarian Worcester Sauce
  • Chopped Basil

How to make:

  1. Heat the Chickpeas and Lentils gently for 4 minutes.
  2. Chop the vegetables into small pieces.
  3. Add all ingredients together.
  4. Finish with a side of Hummus.
  5. Drizzle your salad dressing over your salad
Add as much of each ingredient as you wish or add some of your own salad favourites to make it personal to you.
